Other theories describe its origins as a minor preparation of &#8220;scamozza&#8221; (Scamorza cheese), which in its turn probably derives from &#8220;scamozzata&#8221; (&#8220;without a shirt&#8221;), with allusion to the fact that these cheeses have no hard surface covering typical of a dry cured cheese.</p></blockquote>
